"Pepperonata"

My Grandma used to make this sauce; it was a recipe given to her years and years ago and she used to make it for us kids when we stayed with her in the holidays etc. Lovely with chops, pasta or anything really.

1 tin toms or fresh, diced
1 onion, chopped
1 pepper, chopped
sugar to taste - I use about a tblsp of brown sugar

Simply fry the onion and pepper together till soft then add tomatoes and sugar, simmer for 10-15 mins-easy eh?!

Took me ages to get it right and wondered why it didn't taste how hers used to (Grandma died a couple of years ago so difficult to ask her!) . Realised it was because I was using extra virgin olive oil rather than good old fashioned butter!

It's a good one for variations - adding herbs, other veg etc.
Enjoy... :)
