onion/potato salad to die for.

With the braaing season here (almost :-\) this is a great way to try new salad recipies and impress your friends and family!
This is a great way to use potatoes or onions.
Sauce
2 large eggs
100grms sugar
125mls grape vinegar
60mls water
2mls mustard powder
S & P
Whisk eggs, sugar, mustard powder, and S & P together and add the vinegar and water, beat well.
Heat over a low heat stirring all the time until the mixture thickens, simmer for 2 mins, stirring.
Pour over cooked hot sliced onions or whole shallots.
Leave to go cold.
This salad keeps well.
You can also use chopped cooked potatoes instead. I get asked to bring this salad to wherever I'm invited.

Yes Tim, I've used different vinegars, depends what I have in the cupboard.
Hoping to make the salad today for braai as I've a whole sackful of last years onions to use but alas yet again the weather here in Chester is wet and coldĀ :(
Where is the sun I was promised, ??? it came out tantalizingly for 20mins yesterday just to taunt me :(

For above recipie forgot to say, slice onions thickly (if not using whole shallots) and boil in a little water till soft.

Saw the heading 'onion/potato salad', and wondered if anyone knows how to make the austrian potato salad?
It seems to be a mix of boiled/sliced potatoes, with onions (raw? boiled?), possibly butter? and vinegar/vinegar dressing?
It's very sharp & tangy, definitely no mayonnaise/cream, and I go a bundle on it; but every year forget to ask how you make the stuff!
Anyone?

Here's one that sounds similar to what you want.
4 large new potatoes (2 & half lbs aprox)
1/3 cup finlely chopped parsley
1 small onion, finlely chopped
1 tbl sp. Dijon mustard
1tea sp. salt
1/4 tea sp. pepper
3/4 tea sp. tarragon leaves
1 or 2 cloves crushed/minced garlic
1/2 cup white wine vinegar
2/3 cup olive or salad oil
Cook potatoes till tender, drain and satand for 10 mins. Then slice thickly and place in large salad bowl.
Add parsley and onion. Blend together: mustard, salt, pepper, tarragon, garlic, vinegar and oil. Pour over potato and toss gently to coat. Cover and let stand at room temp for at least three hours or serve chilled.

ani i might try your first recipe it sounds lovely and i am always looking for an original way to serve potatoes.
I guess if you served a mix of onions and potatoes it would still work well, right?

I tried it last night, with onions and potatoes! YUM!! Might cut down on the sugar next time though, bit sweet for our tastes, it was so easy to do too! Thanks for posting it ani, delish! ;D (am already imagining it on new pots from the lottie, with maybe some mint in the dressing ;)!)

Glad you liked the salad. :)
I guess it would just taste vinargary without the sugar and not sweet & sour. but try with less sugar. Sometimes I put 3 eggs to make it thicker. One of those recipes you can experiment with.

If you experiment with honey let us know if it works.
In my curry bean or banana salad i sometimes substitute honey instead of the apricot jam if I've run out...tastes OK :)
