Converted one of my few remaining pumpkins into a pie on Sunday.

Wow. Really tasty. Need more pumpkins next year!

I shall be roasting the seeds tonight for a snack too.

I've never made pumpkin pie efore - well not the sweet one anyway.  Would you mind sharing your recipes??

I guess this should really go in recipes, but heres the best one that I've used....
No Fault Pumpkin Pie
Filling:
3 cups cooked pureed pumpkin or squash (steam or boiled til squishy)
3tbs white sugar
3tbs brown sugar
2tbs molasses
1/2tsp allspice
2tsp cinnamon
2tsp powdered ginger
1/2tsp salt
2 beaten eggs 1 1/2 cups evaporated milk

1 unbaked 9 inch pie crust

1) Preheat oven to 190 C
2) Place pumkin/squash in big bowl and add all other filling ingredients. Beat until smooth
3)Spread into the pie crust and bake at 190 C for 10mins. Turn the oven down to 175 C and bake for another 40 mins or until the pie is firm in the center when shaken lightly
4)Cool at least to room temperature before serving. Good chilled...lovely with cream or ice-cream.

I usually do extra pureed pumpkin portions of 3 cups each and bung them in the freezer ready to make pies for other special occasions!

Hope you give it a try...if you've never had it before the first taste is a little strange, then horrifyingly moreish!!!! :D
