Espallier apple trees and prunning normal Apple trees

I am thinking of planting some, how wide do they grow? I am thinking of growing cookers - may Rev Wilks.
I also have a M26 family tree and a ballerina, which need pruning (both eaters). I don't want them to get any bigger, any advice?

Don't Espaliers grow as long /wide as you let them ?

Thanks for that. I am not 100% sure espalliers are a brilliant idea - need to buy them soon.
I am not at all confident with gardening - particularly fruit trees.
The only thing I am confident with is whitecurrants 60% success rate :) (i.e 2 out of 3 bushes have done really well)
