Garlic Waxy Breakdown - Edible?
« on: September 08, 2019, 18:18:37 »
My garlic crop this year has come out with pretty much every clove having a yellow waxy appearance despite the bulb's outside appearance looking fine.  I've finally discovered this is something called garlic waxy breakdown and due to very high temperatures at the end of the growing period and which we of course suffered this summer.  What I cant find is something which says they are definitely (not)ok to eat...there is opinion both ways.   No internal damage so far but I'd rather not keep going if it's the wrong thing to do.   Many thanks for some advice here as I guess I'm not the only who had waxy garlic this year.

You could consider freezing it before it deteriorates to an inedible state.

For example; you could freeze it in a number of ways e.g freeze the cloves whole or crush them and put the pulp into an ice cube container. In this way you can use them a cube at a time when cooking!
