SCALLOPS FRIED IN OLIVE OIL ON SHELLS, WITH PROSCIUTTO AND CIABATTA BREAD CRUMBS PLUS SOME MIXED FRIED VEGETABLES.

Enjoy Fried Scallops now and again and why not in their natural shells.

Made some Olive Ciabatta Bread and set aside.

Fried in Olive Oil 1 sliced Garlic Clove,1/2 Green Chilli Pepper ,1/2 Red Chilli for a bit of Heat,1 fine chopped Shallot,1 red tomato deseeded and chopped small, once cooked through keep warm on a low heat in the oven.

Fry a few slices of Prosciutto till crisp and set aside to cool. …. Once cooled ,break into tiny crumbs.

Take 1 slice of the Ciabatta Bread and blitz, then fry in Olive Oil till crisp then set aside.

Fry the Scallops in Olive Oil on a medium high heat for 1 minute or so each side,at the last 30 seconds add the Sea shore Samphire and warm through.

Make a Mound of Samphire on your plate, then take your warmed vegetables and place on the shell beside the Scallops, sprinkle the Prosciutto and Bread crumbs over the plate and scallops.

At the last minute take a small dab of butter and frazzle this in the residual pan heat with the olive oil,and pour the hot mixture over the scallops,season with cracked Black Pepper.

Finished,far from it,Rip some of your Tasty Olive Ciabatta Bread and mop up your juices and vegetables……...me Grandad would have been proud of me doing the Plate Mop…..delish !!!!!!!!!!!!!!!
