GARDEN BREAKFAST OMELETTE

The Fun part of Growing Fresh Vegetables in the Garden is that when you fancy Eggs for Breakfast it’s a Bonus having Natural Greens to chop and add to them,of course 500 yds away is a small holding fella who sells our Eggs, very handy.

So I chopped some Carrot Tops,Beetroot Tops,Nasturtium Leaves and Flowers, and Perpetual Spinach Leaves, 3 x Fresh Eggs mixed and seasoned well.

Meantime I roasted some Young Carrots,Asparagus Spears,Vine Tomatoes,Sliced Mushrooms,New Potatoes and a sliced Aubergine.

Added the Roasted Veggies to the Egg Mixture,Cooked this in a pan on a medium Heat and put the pan under a Hot Grill to cook the Top of the Omelette.

1 Slice for Breakfast and the Cooled Remainder for Judy and I for Lunch today.

Enjoy
