Chutney with unripe Bramley apples?

Hi,

After being told that this is the best time of year for shaping/pruning my fruit trees I have collected a lot of small unripe apples today. I was planning on making a 'Glutney' type chutney recipe and wondered if I could use these apples in chutney. I gather that unripe apples contain more pectin so will this result in a too jellified chutney?
