What Now?

After some failures this year I have managed to grow some chillie plants - I got a pack of six different varieties as plants from Dobies. So now the fruits have grown and are still green do I have to wait for them to turn red? I think some are meant to be green, I even think there was a Peruvian Lemon type. Also, is it feasible to dry them?

if there going to turn red then you will get the best flavour once they have ripened if you use your chillis fresh a tip is stress the plant a couple of days before harvesting either by not watering of too much water this makes the chilli hotter all chillis can be dried but its easier to dry  the smaller thinner types than the big fleshy types like Hungarian hot wax these can be put in vinegar   hope this helps
