Its nearly upon us again when the Mackerel arrive,so it would be rude not to
enjoy a couple of fillets for a Top Lunchtime snack..!!!!

This is a Hot & Crunchy Cool mixture that hits the spot !!!!!!!!!!!

INGREDIENTS

SPICED MACKEREL

2 x Mackerel fillets pin boned and 3 slashes cut into the skinside.
100g/4oz butter, softened to room temperature
1 tsp cayenne pepper
2 tsp sweet smoked paprika
1 tsp ground coriander
1 tbsp golden caster sugar
½ tsp English mustard
few drops Tabasco
2 tsp red wine vinegar
sea salt and freshly ground black pepper



Mix all the Spice ingredients together and set aside.



Rub the Spiced Butter Mixture over both sides of the Mackerel Fillets
rubbing into the cuts then season.

HORSERADISH POTATOES

1 LB new potatoes,Steamed in their skins and cooled
2 tbsp olive oil
sea salt and freshly ground black pepper
2 shallots, finely sliced
2 tbsp soured cream
2 tbsp creamed horseradish(or to taste)
2 tbsp finely chopped fresh chives



Once New potatoes are steamed and cooled,cut them into quarters
season and fry in a spray of hot oil till Golden Brown and crispy.

set aside to cool ...........



Now add the other Horseradish ingredients to the spuds and blend together.

TARTARE SLAW

100g White Cabbage shredded fine
1/2 Red Onion Chopped Fine
4 Tbsp Mayonnaise
3 Cornichons ( or Gherkins) chopped small
1 Tbsp Capers drained and chopped fine
1/2 Tsp Dijon Mustard
1 tsp White wine vinegar
handful chopped parsley
salt & pepper to taste



Lastly,add all the Slaw Ingredients in a bowl and fridge to cool.

Heat a grill to its hottest and cook the mackerel fillets 4/5 mins each side
or until cooked through.



These 3 components are all separate and can be enjoyed on their own
or with other things but seem to come together well.



Anyway,plate up your Crispy Potatoes and Crunchy cooled slaw and Top with the Hot Grilled Mackerel fillets.
