Low carb chocolate orange, lemon or almond muffins

Chocolate Orange Muffins

4oz (113g) softened butter.
 4oz (113g) Greek Yoghurt
 1 cup (22g) Splenda
 4 eggs
1 tsp Lemon extract
2 tsp orange extract
Grated rind of 2 oranges
6oz (170g) ground almonds
1 teaspoon baking powder
4 Tbs cocoa powder
about half a bar of Co-op Orange Chocolate .

Mix the butter, yoghurt and Splenda together with a hand whisk. Add the eggs one at a time mixing well, blend in the orange and lemon extracts plus the grated peel.  Mix together the ground almonds and baking powder, plus the cocoa powder and add to the egg mixture a little at a time.  Put a spoonful of the mixture into a muffin case.   Pop a square of chocolate  in and top with more mixture .
Bake for 10 minutes in an oven (gas 4/350F/180C) and then turn the tray around and bake for another 10 minutes or until fairly firm.


For lemon or almond muffins, leave out the cocoa, orange extract, chocolate and oranges and add three teaspoons of lemon or almond extract.

I think the lemon versions would be right up Judes street.
