Tandoori Dabs with Spicy Naan & Cucumber Raita

As its fast approaching that time of the season when there are some
Fat Dabs to be had it seems rude not to cook up a few Tandoori Style.
Of course your wet fish man might have a few on the quite.

so if your full of simply grilled or fried Dabs,give this a go  !!!!!!!



INGREDIENTS

1 or 2 Dabs per person(Gutted,head,tailed,and frills trimmed off)
1tsp ground coriander
pinch hot chilli powder
1tsp garam masala
1tsp turmeric
1 clove garlic, grated
1in piece fresh ginger,grated
1tbsp tomato purée
150g Greek yogurt
juice of 1 lemon
finely sliced red onion and tomato
Fresh Coriander
salt and pepper



assemble the ingredients



 In a food processor, whizz spices together till combined, add garlic and ginger and whizz again, then mix in tomato purée and yogurt. Season
and set aside in the fridge till needed.



Slash fish across body, then sprinkle over lemon juice and a pinch of sea salt. Put to one side and leave for 10 mins, using a glass dish smother the fish with yogurt mixture cover glass dish in clingfilm and fridge for 2 hours.



Right,lets knock up a quick onion,coriander and tomato side salad.

Ok,with time to kill we may as well make the Spicy Naan Bread.....

Ingredients

8oz White Bread Flour
1/2 tsp salt
15grms fresh yeast (7grms dried)
60ml lukewarm milk
1 tbsp vegetable Oil
2 tbsp Natural Yogurt
1 egg
Fresh Coriander
Fresh Mint
1/4 tsp Cardamom Pod seeds crushed
1/4 tsp Dried Chilli Flakes Crushed
1/4 tsp Dried Cumin Seeds Crushed
melted butter for brushing



Sift flour and salt,then add yeast to warm milk and set aside for 15 mins.


Meanwhile blend dried spices,and chop fresh coriander and mint.

Add yeast mixture,Oil,Yogurt,and egg to the dry flour and kneed together to form a dough.

Turn out onto a floured board and continue to kneed untill dough is smooth and elastic.


At this stage,add dried spices and chopped Herbs.

Place dough in oiled and cling filmed bowl for 1 hour or untill doubled in size.

Preheat oven to hottest setting....250 degrees...and warm tray on middle shelf....for 10 mins.

Meanwhile turn dough onto board and knock back,divide into 3 balls.

Set 2 aside and roll out remainder to ovel shape 10 ins x 5 ins..ish.


Roll Naan

set aside remaining Naans till needed(oil and cling film in fridge)


Preheat Grill,then put Naan into oven for 3 to 5 mins or untill it puffs up.

Remove from oven and grill till surface is slightly charred.



A Fresh Cucumber Raita is a must with spicy foods for me so lets make this now..........

250ml/8fl oz natural yoghurt

½ cucumber, grated or finely chopped

large handful mint leaves, chopped

large pinch salt



Ok......now all the sides are made lets get the Dabs cooked.



Place dish on the middle shelf of a pre heated oven......190 degrees fan oven...... and cook for about 15 mins, till topping starts to char slightly and fish is cooked through.

..........of course fresh Flounder,Sole or Plaice fillets can be used.

....and naturally shop brought Naan breads and Raita will save time.



so for a light lunch,Plate up 1 or 2 Tandoori Dabs with some Onion & Tomato salad and cut up a Naan for dipping in the Fresh Cucumber Raita,
serve with Fresh Lemon and chopped chilli and coriander.
