How to preserve chilli?

I've will loads of chilli's to harvest soon. What's the best way to preserve them for long term use?

I have frozen them and dried them successfully.

Good to know that freezing is successful.  I have loads of Rocoto peppers and have started halving, deseeding and freezing them.   I was hoping this would work, good to have the reassurance that it does.

I just wash and freeze them whole. The seeds seem to come out easier when frozen, that's if you want to remove them before cooking!!

I'm still using some Apache I froze 3  years ago. Haven't even started on last year's crop!

I really like making chili sauce which seems to last forever but I dry them and freeze them as well.  An exceptional crop this year means I am giving away bottles of the stuff to friends (and the really hot stuff to enemies!!!)

Still got loads of dried and frozen from several years ago!
Moved to Portugal - ain't going back!

yer ,frozen whole here too,we still have 3 year old different varieties that have moved with us from Heathrow to Dorset and are still
happily Brrrrrrrrrrr in the freeeeza  !!!!!

Luv the sound of the chilli sauce Barriedale,were up the O2 in a few weeks Ill try and stop off down "sarf London" and mug you for a jar...is it all hush hush mate,or is the recipe you use well known.

It's a family secret handed down from last year!!

Actually I do have a rather odd ingredient - a bit of lime pickle which gives a nice sour tang.  Come tap me up for a bottle!
Moved to Portugal - ain't going back!

Freezing whole is not an option.  Half of one is all that OH wants in his dinner.  A whole one makes a dish quite hot even for me - and I really wouldn't want to risk finding out how much hotter they are if the seeds were left in  :toothy10:

Half should be easy to get out of the bag individually and chop whilst still frozen.  Thanks all  :wave:

Thank you for advice so far. Can all chilli's be frozen or is it a certain type that will freeze well? This is a list of chilli's which I will be harvesting:
Seven pots Chilli,
Chocolate Habanero
Habanero,
Bhut Jolokia ,
Trinidad Scorpion Moruga,
Fatalii,
Thai red hot or birds Eye.
Plus some other chilli's which I have no idea what there name's are..

I'm one for favour for drying...just because of I can then grind them later on for spice as and when they are needed. I tend to grow more of the hot end of scale chillies and I find spicing them is best way to use them up...more control over the quantity and less ruined dishes  :icon_thumleft:

I think I would agree with goodlife for the hotter chilli. Last year I grew different varieties and dried and bottled separately.
