Thai Cod & Singapore Style Noodles

Grab yourself a fat coddy and fillet.



Pin Bone and Pad the fillets down with kitchen paper.



I prefer to skin the fillets as the flakes fall apart in the Thai sauce.



Assemble your Thai Sauce Ingredients

1 tbsp Thai red curry paste
3 tbsps Flora Cuisine
Ground black pepper
2 cod fillets
2 shallots chopped
2 cloves garlic, grated
115g mushrooms, chopped
115g cherry tomatoes on the vine



Mix together Thai red curry paste with 2 tbsps Flora Cuisine and season with black pepper. Place the cod fillets in a lightly oiled oven dish and spread evenly with the curry paste mixture



Heat remaining Flora Cuisine in a frying pan. Add in onions, garlic and mushrooms and fry for 3–5 minutes until just softened.



Spread the mixture over the cod fillets and top with cherry tomatoes.
Heat your oven to 170 degrees(fan oven) and place the oven dish in the middle shelf uncovered for 25 mins.



Ok while the Thai Fish is cooking lets assemble the Singapore Noodle Ingredients and get them cooking.

1 Pkt Singapore Style Noodles
1 Tbsp Flora Cuisine
Splash Sesame Oil
Splash Sweet Chilli Dipping sauce
1 Tsp Schwartz Thai 7 herb and spice mixture

Vegetables are your choosing......

I chose......

1 Green and Red Pepper chopped small
2 pieces of celery chopped small
2 Carrots chopped into fine strips
1 Red Chilli deseeded and chopped fine(your choice how hot)
Few mushrooms chopped small
1 Garlic clove grated
1 inch piece of Ginger skinned and grated
Few Raw Prawns(optional)
handful of Fresh coriander chopped fine



With 10 mins Fish cooking time left Heat the Flora Cuisine in a Wok/Pan and add the chopped vegetables and cook through on a high heat......

add Prawns and cook through ....2 to 3 mins...............

Now add a splash of Sesame Oil and add the Noodles to the Wok,work the Noodles through the mixture till warmed,sprinkle the 7 Thai Spice on lastly add the coriander and mix thoroughly add the sweet dipping sauce if you like your noodles that bit sweeter,place lid on pan and turn heat off.



Once the fish is ready remove from Oven..........



Remove lid from Wok and serve Singapore Noodles .....



The fish is soft and will have flaked in the Thai sauce so carefully serve
it on the plate covered in the Mushroom mixture and spoon some of the sauce around it,now add the Singapore Noodles and Vine Tomatoes.

Tuck on in   !!!!!!!!!!!!!!!!!!

Where did you catch the cod gazza?  We didn't even have a bite when in Cornwall just over a week ago.

About 1/2 mile from Boscombe pier.....shame you folks didn't catch on your hols.
