Winter Fish Stew with Wholegrain Rice

Any hearty Winter fish stew is a winner,the choice of fish used is endless but this version has Monkfish as its a firm meaty fillet plus the rice is wholegrain, that is full of nutrients that help in our daily diet...and this variety is Gluten Free.



INGREDIENTS...SERVES 4

12 oz Uncle Bens Wholegrain Rice 
2 pints of fish stock
1 1/2lb of Monkfish Fillets cut into bite sized pieces
Handful of cooked prawns
Few shell on cooked prawns
1 Medium Onion Chopped small
 2 cloves of Garlic Minced (or more to taste)
1 Red Pepper chopped
1 Tin chopped tomatoes
1 Red Chilli chopped small
Handful of Frozen Peas
1 Tbsp Turmeric
1 Tbsp Tomato Puree
2 Bayleaves
2 Tsps Sweet Paprika(or more to taste)
Olive Oil
1 Lemon
Fresh Coriander
Salt & Pepper



Heat some olive oil to a medium heat in a frying pan and sauté the Onions
Garlic,Bay leaves, for a few minutes......

Once the onions are softened,add the Turmeric,Paprika,Tomato Puree,Chopped Red Chilli and stir the pan to distribute the contents for
1 minute further.........

Add another splash of oil and warm through,now add the Wholegrain Rice to the pan,now mix the pan contents thoroughly coating the rice with the oil and flavours.

Add 1/2 pint of Fish stock and bring the pan to the boil,stirring constantly




Now add the chopped Tomatoes and add a further 1/2 pint of  fish stock 
,stir well and replace lid on pan and gently cook on a low heat for 10 minutes ...this should see the rice cooked through

 

After 5 minutes pan cooking time add some more fish stock if needed and place the Monkfish pieces just sub surface in the stock plus the frozen peas.... season well and replace the lid for a further 5 minutes..............

NOTE....around 1 1/2 pints of fish stock is about right but you can add more if preferred.



With 1 minute left add both types of Prawns and warm through.

...............REMOVE BAY LEAVES..................



Spoon some of the stew into a large bowl if you've left it dryish it will be more risotto style , easily fixed if necessary add some of the fish stock around the edge of the bowl and stir through.....add more chopped chilli if wanted and chopped Coriander.

Serve with toasted bread slices,finish with a squeeze of fresh Lemon.
Its a scrummy warming winter dish full..!!!!!!!!!!!

LOL! I did the brown rice thing for years thinking I should!
looks delish Gazza, I must get past the fish and chips phase :tongue3:

yer,its my fault really,ive been reading so much about the plus points of Wholegrain Rice being great for us Diabolics I used it.....and hey......really enjoyed it.....and will be cooking with it again.......us Type 2,s are only a small select club,but somebody has to feed us...... :tongue3:

Whole grain rice isn't too bad but wholemeal pasta is horrible!
