Elder Flowers taste awful question

I love the taste of elder flowers and there is a tree near my lottie which makes a lovely tasting brew. So when an elder arrived in the garden I decide to leave it. But the flowers taste awful and smell even worse. There is nothing remotely appetising about them. They are foul.
Is it necessary to get a particular type?

Not a particular "type" but the flowers from different bushes wary a lot, from the nice flowery ones for wine and cordial to those with a cat wee scent. You would be best getting rid of the garden one and trying to take cuttings of the nice one.

I had kind of assumed they all taste the same. Yes cats pee that it precisely right.
People come with bags and strip the hedgerows. Not sure they bother to taste it first.
