Sole En Papilotte

One O my favourite flatties as its a delicate fish and has a distinct flavour.

A real easy version that can apply to lots of different fish but all cooked in the same Greaseproof paper method.

Ingredients

2 Whole Sole,skinned and cleaned.
2 Shallots finely chopped
1 Tbsp White Wine(optional)
30g Butter
olive oil
1 Lemon Sliced
salt and freshly ground black pepper


Prep your Sole and set aside.


(heat oven to 200 degrees)
Meantime cut large piece of parchment papper 24 x 18 ins approx and place sole in centre and oil both sides and season well,then add chopped shallots over fish and a few knobs of butter and finely place lemon slices over top,at this stage you can add your wine if using.

Make envelope from parchment paper enclosing sole but allow some room all around fish.


Place envelope in centre of oven and cook for 10 to 12 mins (or a few mins longer for larger sized fish)


Serve over mashed potatoes with juices from the envelope or veggies of your choosing and a butter sauce.
