This recipe assumes you have an electric whisk or a Food mixer with a whisk.
Don't try to make this using a food processor you won't get the volume of air.
You will need 2x 8 or 9 inch sandwich tins greased and lined with baking parchment. Just cut out circles the same size as the bottom of the tins.
4 eggs
4 oz caster sugar
4 oz plain flour
Whisk the eggs for a couple of minutes to break up the eggs then add the sugar and whisk until the eggs and sugar are pale white and double in volume.
They should leave a trail behind them like thick cream when you lift the whisk.
Sieve the flour and fold in to the eggs gently. Try not to over work the mixture or you will loose all the air you whisked into them. DIvide between the tins and bake for about 10 minutes at 190 C or 180C if you have a fan oven until the sponge springs back after you press it gently with your finger.
Turn out and cool on a rack.
You can vary the flavour by addin a teaspoon of vanilla extract or Lemon , or lime ,or orange rind.
This will be much nicer and cheaper than buying ready made. You can also get sponge flan tins to make your own sponge flans.
