Hairy Bikers Cajun Spiced Chicken

Well,it had to happen,them fat blokes have dedicated some recipes to letting out Mr Thin from the fat closet.
This spice mix is one of the recipes from their New diet book that Jude got us on the Ipad,so thought id trial it today on chicken.

OK......

Cajun spice mix

5 tsp ground cumin
4 tsp smoked paprika
2 tsp dried thyme
2 tsp dried oregano
2 tsp coursely ground black pepper
1/2 tsp cayenne pepper
1 tsp flaked sea salt


above ingredients mixed in air tight container


wrap chicken breasts in cling film and flatten to "escalope" thickness
with rolling pin.


flattened chick breasts(1.5cm).....ish


sprinkle 1 tsp of cajun spice mix over each chicken breast.


3 mins on each side,saw the chick breasts cooked through nicely.


I prepped a quick salad and served them in crispy rolls


Served it with Tzatziki dressing,the chicken was juicy  and must say their cajun mix wasnt too fiery but was a subtle warm taste blend  that I would have though not only suitable for chicken but may be tasty on pork and sea food.

Enjoyed it anyway as my first attempt at their Diet Foods.

I saw them do the chicken on the program and thought that
looked nice. Now I can see that it really does look nice.  :o ;D

mmmm..looks really nice and the hotness is easily adjusted for the taste...just thinking of my home made chilli powder from home grown dried chillies...HOT,HOT.. ;D

OH..what is this cursed word that I see used in your post  ???....DIET!!...surely not!?,,that will ruin good man and good food... ;) ;D

Definately going to give this a try, looks yummy!

I made the cassolet they did in their first show.  It was really really good, and now a family favourite :)

the cling film stops the flesh from breaking up and gives a better escallop shape

Do a good clingfilm bash with pork loin chops, any frying beef and lamb, if so inclined too, tenderises most meats!  ;D

Might be on the me and u minus the rolls gazza this weekend.

Youll get me shot Goodlife,Judes always on me case about the type of fun cooking I enjoy as its normally full fat and tasty,but at least seeing the TV big boys doing a bit of weight gives me hope...I mean even Diabetics daily send me mail with all the latest....Gluten free this and gluten free that recipes....maybe Ill take note one O these days...... ;)


This was tuther night on the Thames and as usual I take the pasties for me fishing buddies,me mate Bazza said I should hold up more fish as its "slimming Gazza",cheeky sodd !!! ...I just say im 5 ft 10 high and 16 stone wide..... ::)

Olive Oil is a sin I can live with but like all things just smaller quantity.

But if you dont fancy it fried...................



I Low cal Olive oil sprayed some other breasts and cooked them 170 degrees for 20 mins in the oven.

Just as tasty,and nice cold with a salad......Not allowed to use the D word...... ::)..... ;)
