Love beetroot,  such a bind to cook.

Read of a thread about micowaving it.    A bit of water, a glass jug,  4 minutes.  Lovely beetroot.   Problem solved no mess.

Also very good roasted with a variety of veg in a little olive oil and garlic wrapped in tin foil. ;)

I do love them roasted.   But I do not what to run the oven everytime I want one small beedroot.

Ah yes, just the one would be going to overkill by putting on the oven.

Never tried the microwave method. Will give it a go tho'.

I usually cook more than one at a time.

Pressure cooking them is good too. It takes about 8 mins or so for large ones.

I pack a layer in my slow cooker with about 1/2 inch of water,about 3-4 hours depending on size.
sanity is overated
