« on: February 25, 2005, 15:59:23 »
An Ideal sauce for various vegetables:
Asparagus..Beans..and Carrot Dishes.

* 10 shallots
* 1 clove of Garlic
*60g Melted Butter
*100 ml double or whipping cream
*75ml water or white wine
* partly cooked vegetables...Fresh Herbs

Peel and Finely chop/slice the 10 shallots and crush the Garlic.
In a deep Frying pan sweat these off in the melted butter over a low heat until the shallots become translucent.
Then add the 100ml of cream and water/wine as required.

At this stage you can add your parrtly cooked vegetables and 2 tablespoons of fresh herbs.
Turn up the heat and cook for four or five minutes or until the vegetables are heated through.

With Carrots..Try Caraway Seeds and freshly torn Coriander.

With Asparagus..Try Chervil..Fennel..Dill or especially Tarragon.

Go on Try it ...you'll enjoy it  ;)

Sounds delicious, although doubt whether children would like it.

I am trying to coax my son into eating vegetables but it is not easy.

I used to put mine in the food processor, or chop them very very small so they didn't look like veg, and add them to shepherds pies etc!

 ;DYes I did the same as DP, it works, also I always put a small peace of veg on the plate even if they wouldn't eat it, even if it was just 1 sprout. If they get the idea they don't have cabbage because they don't like it, they never will eat it...Peas are usually a favorite and very good for them.

I'm lucky mine love veggies, but if I have a little visitor for dinner as I often do (I'm of the feed the world up inclination) and I know they don't usually eat veggies at home then I sauce them up!  Tomato (NOT KATCHUP!)sauce with a little honey, or cheesy sauce, or a favourite is always a leeky cheesey sauce, or creamy one like this one.   They usually eat it!  Or make veg into a dipping sauce for another type of veg, asaparagus or cucumber or celery dipped in yummy and mucky fun!
