Roasted Whole Bream with Fried New Tatters

Every know and again a simple Whole fish wrapped in Parchment
paper is spot on with some semi boiled New potatoes fried.
Saw a crackin looking 1lb plusser Bream on my local wet fish stall
so.....here we go....get your friendly wet fish guy to Top and tail,Gut and
scale your fish....so get started  !!!!!



1 x Bream whole on the bone....about 1lb + feeds the greedy(me)
3 or 4 Roasted Garlic Cloves
Par Boiled New Spuds...chill before frying.
Few sprigs of Fresh Rosemary
Handful of chopped Curly Parsley
Glug of Pinot Grigio or White wine of your choice.
Glug of Good Quality Extra Virgin Olive Oil
Splash of Fish sauce(optional)
1 Lemon
Salt & Pepper

First thing is to get a pot of boiling water on and par boil the new spuds
for 10 minutes.....
.....once you can pierce a knife through them ..set them aside to cool
....then chill them in the fridge for 30 mins.

Roasting the Garlic cloves releases the gooey contents easily ....
....so to get at that soft centre....

Set your oven to 190 degrees,place your Garlic cloves on a pan in the
centre of the oven...drizzle some olive oil over the cloves and a shake of salt......

.........Roast for 20 mins or so....then set aside.

.........(Preheat your oven to 220 degrees).......Meanwhile  !!!!!!



A bit of kick to the Fries doesn't hurt and this Paprika is a pungent yet sweet
variety that gives the chips a lovely flavour....again its optional.



Hot pan with Cooking oil of your choosing,fry the Chilled sliced new spuds
till there Crisp on both sides but still soft inside.....

Meanwhile lets get the Bream sorted......



Place a 20 ins x 20ins piece of Parchment Paper on a board.......
....place the Bream in the centre....stuff a sprig of Rosemary in the gut cavity....place another on the fish along with the Roasted Garlic.....
.....then season well.....Tip a Good Glug of Extra Virgin Olive oil over the fish....

Bring the bottom of the parchment paper over the fish till it meets the top
.......crimp the top edge (Pasty style) ...try to leave some air in the package
as it helps to steam/roast the fish......
....twist one end to close it off.....



Tip a glug of Wine into the package along with a splash of fish sauce ..this enriches the flavour.....but is optional..!!!!!



Twist the end and place on a tray in the middle of the oven for 15 to 20 mins.....a 1lb plus fish should cook in about 17 mins.



Serve the Parchment package on your plate,open and cut the paper back
and add the fried potaoes....season and sprinkle some chopped parsley..
...and some lemon segments.



Peal the soft skin back to reveal the juicy white flesh.

Ooooh Gazza where did you get that paprika from. I love the tin. Hang on,,,just checked , your paprika is here same make as the one I have in the kitchen but my tin is red.

,I get it in my local Deli,its the centenary blend.....stunning flavour on fried potatos and special on skinned chicken breasts roasted.

That bream looks good Gazza. It's a long time since I've had bream, not since our local fishmonger was Tesco'ed.  And our Tesco don't seem to sell it for some reason.

yes,we are very lucky here in Wimborne Dorset that the wet fish man is so popular with the large older generation that he is very busy and always has a good variety of fish for sale.....but as for store buying there was an article a while ago that said that quite a few of the so called big boys....Tesco...Morrisons and others were using frozen products when they advertise "Fresh"....I can tell fresh from pre frozen on whole fish but its a bit difficult with fillets.

Morrisons do sell Bream but its all Mediterranean pre frozen farmed small stuff that's not the same as a lovely whole firm fresh fish.
