Damson Gin and Damson Port

Would kind folk like to share their method and recipe as I really fancy giving this a shot!

BIG jar...prick damsons with fork of tooth pick and half fill jar with fruit...half of the amount of fruit sugar (eye measure by looking at the jar)....fill the jar with gin.
First week shake the jar everyday to disolve the sugar and to get equally troughout the liquid.
After that shake the jar when ever you remember...once a week perharps.
Keep it 'soaking' for 4-6 months...after that strain the 'gin' into bottles..eat the fruit and keep the gin maturing for another couple of monts or so, minimum.
Next christmas..drink the gin..sipping little now and then..for medicinal purposes only.. ;)

Oh..and add to that..after straining the gin from fruit I like to let it settle first so the remains of the fruit sink down and the clear gin (best stuff) can be easily bottled into 'best' bottles..and the remaining 'cloudy' gin to use straight away..as a taster for things to come.. ;)

It's when I see recipes like these that I wish I could consume alcohol ::).

Well I can't really...but little sip in cold winter day warms chest nicely and shoveling snow is much more fun when I savour the taste of damson gin in my mouth.. ;D
Tiny pleasures in life are the best..if I would take by the mug full..yuck...even without health problems that would make anybody ill... ::)
