HFW's Courgette Polpette recipe

Found this today  thought I would share it in this time of courgette glut!!



Hugh gives courgettes a creative lift with this polpette recipe from River Cottage Everyday

Makes approximately 12 balls..


Ingredients

2 tbsp rapeseed or olive oil.
3 medium courgette, finely diced.
1 clove garlic, finely chopped.
Finely grated zest of half a lemon.
1 egg, lightly beaten.
2 tbsp grated hard Cheddar.
½ ball buffalo mozzarella, diced.
50g breadcrumbs.
1 tbsp chopped parsley.
Freshly ground black pepper, to taste.

METHOD



How to make courgette polpette

1. Preheat the oven to 200ºC and oil a baking tray or line with baking paper.

2. Heat oil in a large frying pan over a medium-high heat and fry the courgettes and garlic for about 10 minutes, until tender and golden. Set aside to cool a little, then combine with all the other ingredients to make a thick, sticky mixture. Season if you like with black pepper.

3. Take walnut-sized blobs of the mixture and roll into balls. Place on the baking sheet and bake for about 15 minutes, until golden. Serve warm or cold, on their own, or with pitta bread and a tomato salad or sauce.

Good to hear they turned out well.

Haven't made them myself so don't know about the freezing but might be

possible at stage prior to cooking

I made these yesters after being inspired by this recipe = many many thanks :-*

All I did differently was to shove a cube of mozzarella into the centre of the polpette, rather than trying to grate it, although the grated hard cheese was included. This is because my mozzarella was 'fresh' rather than the block cooking type I can get here.

Either way, it's a lovely recipe - not been able so far to see abt the freezing stage - too moreish once I'd cooked them, they were ;D

Well looks like I shall finally have to make some myself - with shop bought courgettes :o :o :o

Unbelievably, my plants have produced nothing - this MUST be a first in the history of courgette growing :-[

There's always next year. . .

 ;).........like growing courgettes,.......koz their easy to grow,.....but have never cooked,...or tried them,........since having wot turned out to be a pretty "bland expierience" with them,......any other good ideas,.....on how to use them,.......would be interesting,...gonna definitly,...give them another culinary go,...next year.... ;D

I have made something similar, but with spinach and sorrel - met them in a restaurant and thought "I can make that".

I have also just made a version I read about here:

because I had some frozen prosciutto, some philadephia cream cheese, and lunch guests. It is similar to polpetti, but you put the mixture into (in my case) little fire proof dishes lined with prosciutto with the ends dangling, and the mixture pushed inside. I actually added a topping of finely sliced red and yellow peppers and slices of tiny tomatoes because I had them.

It was very tasty and pretty. The dangling ends go crisp and the rest of the "cup" is soft - and it slid out of the dishes quite neatly for serving. Can't say it really looked like flowers as the recipe says......

Anything that uses up spinach and sorrel is good by me. Courgettes have started to sulk, so I am dependent on a neighbour for them.

The problem with sorrel is that it goes a horrid colour when cooked, but in this mixture you can't see that, you just get the flavour.

Made and ate even more Polpette today. Going to try a spinach version without meat :)
