Growing sweet peas for shows

Hi - I am new to growing flowers for exhibition, and have been growing sweet peas this year for a specific flower show on August 7th.

The judge there last year told me that I'd get the best results if I pinched out all flowers (i.e. stopped them flowering) until a certain time before the show, and then let them flower.  Unfortunately I can't remember the number of days before the show that she suggested!  It might have been ten days.  Does this sound right to you?  Or do you have any alternative suggestions?
