Can anyone suggest any easy to grow indoor plants from seed?

cacti are quite fun to grow, but it's years since I did it. Some more easy than others I guess

Jungle cacti (epiphylums) were easy I think. I have one more than 20 years old, but it isn't a special one. Same coloured flowers as a christmas cactus, only much bigger

In the seventies we all grew coleus as indoor plants, they take a bit of looking after but are very easy to start, and well colourful.

I know this is in Non-edible, so maybe you want flowers, but some edibles grow well indoors. For free plants, I've tried lemon pips, they grow fine but not sure if you'd actually get lemons.
Chilli peppers grow really well, as does basil. Both are very easy to germinate and don't seem to have any problems.

Mother in Law's tongue is easy to take cuttings from  ;)
