Chicken stellete soup
3 3/4 cups chicken stock
1 bay leaf
4 scallions, sliced
3 cups sliced mushrooms
4 ounce cooked chicken breast
half cup small soup pasta but we used small cionch something
2/3 cup dry white wine(we didn't put it in)
1 tablespoon fresh parsley to serve
salt and black pepper
cook everything for 2 to 3 minutes in the stock apart from the pasta..add that and cook until al dente, lovely stuff
mushroom, celery and garlic soup
4 1/2 cups chopped mushrooms
4 chopped celery stalks
3 garlic cloves
3 tablespoons dry sherry or white wine
3 cups chicken stock
2 tablespoons worcestershire sauce
1 teaspoon grated nutmeg
salt and pepper
cook for 30 to 40 minutes then blend
garnish with celery leaves
