enriched white bread

Made some enriched white bread today. qahtan
 11 cups flour
 3 1/2 cups water
 2 cups milk
 3 eggs
 2 tablespoons sugar
 1 1/2 teaspoons salt
 3 teaspoons yeast
 3 ounces soft butter.

I have home made plum or spiced  damson jam would go really well with those shame your so far away ...they look fantastic

Have you ever tried a small amount of hemp flour. We are gluten free & recently found a bread mix that we actually like. I take out 1 dsp of the mix & replace it with the same amount of hemp flour & it makes all the difference & is so good for you.

I really must try and find out how much in fluid oz a cup is.

Must say I have never added an egg to plain 'daily' bread.

P H just done a google 237mls or 8.3fl ozs. I've got a set, I have seen them in John Lewis & also Amazon.

I was planning on doing a loaf today - just trying to scale your recipe down and convert to fl ozs.

Moved to Portugal - ain't going back!

Digeroo - Yep Hemp!  Despite the connactations with cannabis, hemp has been used as a food source for thousands of years.  Hemp flour is gluten free and contains up to 33% protein. The high protein content is why you only sub a small proportion for regular flour..
Hemp seed contains all the essential amino acids and fatty acids needed to maintain a healthy life and you can now buy them in Sainsbury's!!!!
Hemp oil also makes a fantastic soap!!
Moved to Portugal - ain't going back!

Hemp oil is lovely too. I get one called Good Oil rich in omegas 3 - 6- 9s. I don't like the taste of olive oil & I use the Good Oil to pour over food & make dressings.

 my method for enriched bread

 All the water
 add yeast
 and sugar
 and about half the flour
 mix well
 add about half the remaining flour
 then the eggs and the warm milk and the soft butter
 and enough of the remaining flour to make make a nice workable dough, you may take all the flour or not quite all or have to add a little more, BUT DON"T add all the remaining flour in one go, see first if you need it. Knead
until the dough is smooth, again depends on your machine, if in doubt turn onto counter and knead by hand. 
 Flour amount  depends on humidity, age of flour how much moisture in the flour etc etc...
  I place my dough in large oiled bowl  quick spritz with oil on top to prevent dryout. cover and leave on kitchen counter to double in volume. knock back, weigh to size, pan or freeform, leave to rise again as before.
 bake 400 about an hour.
 you can see in the pictures size of loaves when dough is placed into pan, next picture when risen enough to go in the hot oven after getting a quick water spray, next picture shows oven spring, and finally baked.. enjoy.
