Baking with vegetables

Hi guys, do any of you have any recipies for cakes or puddings using vegetables?

I have been helping with a school gardening club but I want to get the children tasting the veg they grow, it seems pointless growing it if they don't taste it.
So last week I cooked some plain beetroot and I also cooked some chocolate and beetroot cake. 
They weren't too enthusiastic about the plain beetroot but they loved the cake. It did get them thinking about it.
So if anyone has any unusual recipies that you and your kids love  please share them.

I make the butternut squash muffins and chocolate marrow bread often.  They're delish.

Beetroot are nice roasted with potatoes.

 Pizza, all kids over here love pizza, they can put what ever thy like on it. you could maybe buy a lump of dough from one of your supermarket bake houses or maybe you have a proper baker that would give /sell cheap some dough.

CHOCOLATE BEETROOT CAKE

It is the best and the easiest cake to make

I have 8 of them in my freezer!

I defrost one when we have a special occasion

Nobody has ever guessed the hidden ingredient

The beetroot sweetens the cake in a very subtle way and imparts a wonderful texture which is moist and hearty.

The other great thing is that it always stays the same height as the original mix before baking - great for birthday cakes - some cakes will balloon or worse - sink in the middle

These are foolproof nuff said

I've tried a few chocolate beetroot recipes including the HFW one but this is the one I like best.  Give the chocolate fudge spread a miss though, it's vile!

This Australian site can be searched for recipes by ingredient - http://fooddownunder.com/cgi-bin/search.cgi?q=beetroot - and then you can fish for cakes and puddings.  The BBC Food site has loads or recipes too.

I have recipes for chocolate carrot cake, carrot cake with banana, carrot cake with cardamom and pistachios, pumpkin cake and courgette cake.  Let me know if you want any of these.

I don't know if anyone has bought it from this site but there is a book available by a lady called Harry Eastwood. She uses lots of fruit & veg in her recipes.

Yes I've got that - have only made one cake so far - a fruit cake with butternut squash - really good

Have you found Recipezaar there are lots of recipes with all sorts in.  Courgette breads etc.  Use the ingredient sifter to put in anything you have and it will find you a recipe.

I think that beetroot is just called beet.

and there's always James Martin's ginger and butternut squash ice cream - very tasty.  (the ice cream as well.)  You can use a pumpkin or courgette instead.
