Ginger Biscuits Recipe??

Has anyone got a good ginger biscuits recipe? (must be crunchie)

Hi Mick. You are in luck if you don't want flat biscuits. These are called ginger hollows. My daughter asked if I still had the recipe the other day. She's 38 now & they are one of her childhood memories.
 4oz marg.
 12ozs castor sugar.
 1 lge egg.
 9ozs SR flour.
 2 level tsp dried ginger.

Cream the marg & sugar, add the egg. Stir in flour & ginger sieved together.Knead lightly. Take pieces about the size of a walnut & roll into balls.  Place well apart on a baking tray. (I use the non stick parchment). Bake at 300deg F 150deg C for about 25 mins.
If you have a fan oven the heat will be 10% lower.

Sometimes I think I put on weight just from reading some of these recipe suggestions!  ::)  I'm going to give them a go tomorrow, so we can have some biccies over the weekend. Thanks for posting GrannyJanny (and to Mick for asking!)

Just made them. And YUM! I found the mixture was a little bit dry, probably didn't put in enough marg, so I added a small tot of brandy/water to help   :o 
Worked a treat  ;D

Made these today - ginger for my mum in hospital, she said they were gorgeous, made some with cherries for OH, who doesn't like ginger, but loved both sorts actually! Thanks very much, will file this one.
