Apple, cinnamon and raisin American Muffins

yummy

2oz butter
2oz sugar
2oz flour
1 egg
1 small/medium cooking apple, stewed
raisins
cinnamon

1. cream butter and sugar.
2. when pale and fluffy, gradually stir in eggs.
3. fold in flour
4. add the apple, raisins and cinnamon (to taste). Mix well.
5. spoon into muffin cases (or fairy cake cases for smaller ones).
6. bake for 15-20 minutes on GM7.

They are really delicious and moist. Best eaten hot.

This amount makes four muffins. 6oz of everything and three eggs make 12.

You might need to add a little baking powder as mine are a little flat.

Wow they sound scrumptious Aqui!!  :D I'll try a batch at thw week-end and if they turn out OK Then I'll make loads for Christmas!!  I love the smell of Cinnamon.  8)

they are scrumptous.

Another variation I made last week that is rather nice and christmassy too is cinnamon, walnut, glace ginger and chocolate. yummy.

Aqui, thanks for this recipe. I made some today and they are delicious, especially hot from the oven. I made a batch of 12, thinking that we could all have some today and there would be enough for lunchboxes tomorrow - fat chance! Only two left and I'm eyeing those out for later tonight with my coffee.  ;D

Hi again Aqui,

I made both types at the week-end, 12 of each, and guess how many are left!!   ::)

My daughter, Laura and my eldest lad, Duncan came to see us and sat chatting at the table with Ian and the plateful of muffins - say no more!!!!  I did manage to get 1 of each kind to myself and they are really delicious. Glad you posted the recipes.  :D

Next time I make them I'm hiding them for that lot!!!  ;) ;)

Glad you all enjoyed them! I just had to share them with you as they are so delicious!

I had the last of mine today. I'm amazed they lasted that long (well there are only two of us and I'm being very disiplined with things like that or I'll have to buy some new trousers!)

Another version I tried was chopped almonds, choc chips and glace cherries - also delicious. Really you can put anything you want in them!

Aqui, thank you, I made your delicious muffins today and they are dissappearing at a rate of knots!  Some went as soon as the kids came home from school (still warm) and the rest at dinner.  Thanks from all of us!
