Sweet cucumber pickle for Hyacinth

well, you asked  ;D
5 lb cucumbers, weighed when peeled and sliced, 1 1/2lb small onions, 2 green peppers, salt to soak
pickling vinegar
1 lb granulated or demerera sugar, 2 oz mustard seed, 2 teaspns celery seed, 1 dessertspoon turmeric, 1 teaspoon mace..about 3/4 pint white malt or white wine vinegar
slice onions thinly, slice peppers, de seed, slice cucumbers, layer all veggies with salt and leave for 2 to 3 hours, rinse then drain
put all pickling vinegar ingredientsin a shallow pan and boil for 3 minutes, take off the heat and add veggies, mix in well and bring back to boiling point again, cool and put into jars

Delia's way is good too.

Just a point - I believe that the longer you degorge the fruit the better it will keep. And put it under your heaviest scale weights.
