Does anyone know how to make courgette wine???

Hi all
Have got a glut of courgette's and was going to make some wine does anyone know how to and does it taste good.

1st year with a allotment and the whole family are loving it, kids love picking the peas they eating them  don't leave many for the pot thou

I could invent a recipe but I won`t-some things are best not made into wine

I haven`t made wine seriously for well over 20 years now but even I had to draw the line somewhere-pea pods can make an acceptable alcoholic drink though ;D

There are recipes around but the only time I would use 'courgette wine' & 'tastes good' in the same sentence it would be followed by the words 'after it has been run through a reflux or fractionating still to strip the flavour'.
The same could be said for a lot of vegetable wines, generally speaking it's better to stick to fruit or flowers for winemaking there are a few exceptions but not many.

It's a bit early for a glut, ours are only just coming into production... We freeze them for stews & soups later in the year... I would be very cautious about fermenting anything that isn't acidic for fear of botulism, I'm guessing that you'd have to add a lot of lemon juice or vinegar?

Thanks for all the help may give it a miss as to turning them in to wine and just freeze them and give lots away
I have a glut as i put in 12 plants ( i know ott but every seed I've put in of every thing  has come up ;D) and currently have 18 courgettes in the bottom of the fridge :o And i gave 5 away when i was at the plot this morning that i cut.....
But 1st year for me with a allotment and a BIG learning curve i now know what to grow more of(spuds) and less off (courgettes)

Definately not wine :(I've got a lovely recipe for roast garlic and courgette soup.it uses 5 courgettes and freezes well :)

I made Courgette Wine last year, not sure what I did with the recipe.
Haven't tried it yet, so can't tell you what it tastes like!

I wish you well-but if you were to show it please warn the judge first!!

I never did get to take the judge`s course but I was well respected enough to be allowed to comment when being the `assistant`

We tasted some really good wines----------but we also had to endure some awful rubbish------and we were asked by competitors what we thought-----basic training for the Diplomatic Corps???

We use frozen courgettes for a soup base instead of adding water cos really thats all they are. I don't think they would replace my dry white wine ;D

I will think of a courgette as a small marrow.....

2.25 kilos of ripe marrow flesh
2 kilos of white sugar, (or brown sugar if you want rum-coloured wine)
4 teaspoons of citric acid
2 oranges
25g of root ginger
4.5 litres of water


Except  for the sugar, grate it all up and mash it using the boiling water. Add the yeast, enzyme and nutrient when it has cooled off.

Stir occasionally for the next 5 days then strain off the liquid and dissolve the sugar. Then proceed as normal.

Steve - its nice to know someone else has made the same mistake, ive got over 15 plants. Its my first year on the lottie too. Dread going down to the lottie tonight as Ive still got 4 in the fridge. somones given me a courgette chutney recipe, heres the recipe.

4 lb courgettes
2lb 8oz onions
2lb 8oz brown sugar
Large piece of fresh ginger
1/2 tspn pepper
2 pints malt vinegar
2 heads of garlic
2lb 8oz tomatoes
1 tspn cayenne pepper
2 tspn salt

Method

Chop all the vegetables, add vinegar, sugar and spices and bring slowly to the boil, stirring now and again. If the courgettes have a tough skin, you can peel them and compost the skins.

Simmer for about two hours (don't forget to stir as it will stick) until thick.

Pour into heated jars and seal.


Notes:
Needs at least three months to mature
