Storing potatoes - can I blanche them?
« on: July 08, 2009, 16:29:27 »
Hi all, had to empty all my growbags full of spuds - they were taking up too much space out the back and we've visitors coming. I've now a surplus of potatoes, all small in size.

I'm wondering can I blanche them and freeze them? Or should I just keep them cool, dry and a dark place?

I've frozen without blanching for use in casseroles, or make a load of mash and freeze tho that's a bit of a waste if they are still new tasting.  As to storing, what variety are they and what stage are the skins at?

Arran Pilort and the skin is very tender, most are around the size of a golf ball.

Thanks for the replies guys, I'll try freezing some now and defrost them tomorrow and see how they go.

I would recommend boiling them until they are about half cooked, letting them cool and then rolling them in butter/lard and freezing them. We did this with some arran pilots and they ended up very good roast potatoes! Put them in the oven from frozen.
