I came across this recipe at the weekend and found it not only very easy, but used things we are just starting to get form the lottie - coriander, peas and mangetout. Thought I would share it with you. I found it from the Times online so hope they don't mind it being copied out! ;D
Lemon Chicken with Coriander Rice:
For the chicken:
2 tbsp honey
1 tsp sesame oil (or any sort - I used sunflower)
4 Chicken breasts
For the Lemon Sauce:
2 tbsp lemon zest, cut into thin strips
About 1 inch fresh ginger, grated
1 tbsp sugar
200ml chicken stock or veg stock
1 tsp conflour
2 tbsp soy sauce
2 tbsp lemon juice
To serve:
Cooked rice
2 tbsp coriander leaves, roughly chopped
Mangetout and peas (or broccoli in our case but just as nice!)
Heat the oven to 200c/400f/Gas 6. Combine honey and oil and coat the chicken with it. Bake the chicken for 20 minutes until cooked through and tender.
To make the lemon sauce, put the zest, ginger, stock, sugar and pinch salt in a pan. Bring to the boil. Mix together cornflour, lemon juice and soy sauce and add to the sauce, stiring until it thickens. Slice the chicken and pour sauce over when the chicken is ready.
Cook the rice and stir through the coriander before serving.
Simmer the veg for 3 minutes and serve as is, ortossedin soy sauce as preferred (we did ours as is).
.... we really enjoyed this dish, even the kids who had plain rice and peas with it and tried the sauce before deciding to pile it on their chicken pieces!
Looking forward to doing it again in a couple of weeks when (hopefully) our peas are ready!
