Damson Cake
«
on:

Found this today and thought those of you with Damsons left might like to give it a try! (lucky you!)
Makes one 8inch cake
Pre heat oven to gas 5/190c/375f
4oz soft butter or marg
3oz soft brown sugar
2 eggs lightly beaten
8oz self-raising flour
1lb damsons, stoned and halved
2oz chopped mixed nuts (Optional)
Cream butter and sugar, till light and fluffy. gradually add eggs, beating well between each addition.
Fold in flour and damsons.
Spoon into a greased and lined 8inch cake tin and sprinkle with nuts.
Bake for 45 mins until firm to the touch . Allow to cool in tin for 10 mins then turn out onto rack to finish cooling.

Well timed reminder DP. Just got loads off a lottie holder up the aisle to me, and was wondering what to do with them. Don't want my husband taking them all for wine. :D Thanks, busy_lizzie

Mimi, I have one in the freezer, There isn't anything in it that wouldn't freeze, so have bunged mine in!
The taste by the way has that nice sharp bite that plums give you, and would be lovely as a pudding with custard!
Roy, if I knew how to I would! ;D
