butternut squash

I have butternut squashs but apart from soup don't know what else to do with them.  Would like to make a cake or pie - anybody got any ideas??

there were a few good recipes for squash on the recipe thread, maybe using the search facility at the top of the page will help, sorry, don't know how to do links  :)

roasted with other vegetable is a favorite of mine.

I used some in a vegetable lasagne .stuck it in with some peppers and mush and onions . made enough for 2 days. Was gonna freeze one but it was so nice that we had it again the day after with a lovely baked Nadine potato

we roast them mainly.

Also use in risotto - dice and fry before adding to the risotto or we sometimes roast a larger amount and put the left-overs in. Add other veg if you wish, eg peas, peppers.

There beautiful boiled and chopped with carrot or sweed
then add a thingy of butter.

I cut them in half. Take out the seeds. slash them about an inch deep criss cross fashion. oil them and add seasoning. give them a rub in. lay them flat on a roasting tray & cover with foil. Bake them and eat them. Easy peesy! Love it!
can't wait to grow some this year. Last lot I grew were quite small though. Will try the cobnut version this time.

Use them as a pumpkin for pie, lots of recipes on the net, that do very well XX Jeannine

hello, I wash, chop the top off, cut in half scoop out seeds then chop into cubes toss in olive oil, s&p and chilli flakes the roast in a moderate to hot oven for an hour - DELICIOUS!! also butternut squash risotto is yummy!

I've love them roasted in the oven with maple syrup drizzled over them in the final minutes.

Also tasty oven roasted and then grate cheese over them and let go golden.
