Have just potted up some dahlias from seed but they seem rather top-heavy. Can I pinch them out?

I have pinched out my dahlia seedlings. They are looking healthy even though they are in the warm potting shed (there is plenty of light) and now about 6-8" tall.  I have been wondering if I can grow them in pots/tubs - do you know?  The ones I am growing are pompom dahlias. Last time I grew Bishops children but wasn't that impressed. Re pinching out; I was going to ask a general question about this as it seems most plants seem to benefit from it. I have pinched out the chillies I have grown for my son and fuschias and surfinia but not sure about some other plants.
