Old French Beans

Due to being away from home for a few weeks a fair portion of my french beans got too big for harvest as green beans.

If left to ripen are the beans similar to haricot, can they be dried and used in stews etc later in the year?

Hope so as I am doing the same.  Picked enough fresh green beans now to sink a battle ship, so the last flush are being left in-situ to dry.  I say we have had enough fresh, and what have I just done....planted another row of dwarf late french beans!!!
