what to plant now?

I have a big empty hole in the middle of the plot where the main crop potatoes used to be.  Nature, abhorring a vaccum, will no doubt want to fill it with weeds as soon as possible.  So, what can I put in at this time of year that won't take too much looking after (will e away for a good part of September) and will come up fairly quick to stop the weeds taking hold?  I know that I could cover it but have nothing to cover it with and don't want to spend any more money on the plot at the moment, plus, why cover it if I can grow more food in it?

Part of it I will fill with beetroot but I seem to have quite a few of them on the go at the mo anyway.

You could green manure it... with vetch or phacalia.... ? Not food but good for the next crops..

I am in a similar predicament....I have sown Phacelia just last weekend, its just showing through
