Pickled Red Cabbage

Grown Red Jewel for the 1st time this year, having a go at pickling. It says to add a tablespoon of soft brown sugar to the vinegar, what is this?

You will find it in the supermarket,close to the normal sugar :)

It's sugar that is soft and brown!  You can get it in the baking section at Tesco etc.  It has a slightly caramelly taste compared to white sugar.  There are two kinds - a golden one and a dark one.  I use the dark one in pickling recipes.
