Greek mushroom balls - manitarokeftedes

3/4 lb mushrooms
2 small onions
6 slices of bread
3 eggs
pepper
cumin
oregano or thyme (I used thyme)
some flour for coating
oil for frying

METHOD
Wash the mushrooms and cut them in small pieces (use a blender if you have one). Make the bread into breadcrumbs. Chop the onions and mix them with the chopped mushrooms, the bread, the eggs the salt, the pepper, the cumin and the oregano. Stir the mixture well. Shape the mixture into small balls - rinsing the hands in cold water helps to stop the mixture sticking. Coat them with flour and fry them in oil.

Note that although the recipe specifies salt, I didnt add any from personal choice.

This is one of several mezzes we are having for tea tonight. A preliminary tasting (chef's prerogative  ) suggests a couple of cloves of garlic would suit our tastes ...

as on the recipe board = tirokafteri (spicy cheese dip), tsatziki (cucumber yoghurt), and tomatoes in olive oil and balsamic vinegar (more italian but still delicious !) with bread and green salad ...

ps all prepared for my first time tonight !
