That was fascinating! Even after a Good Lie Down and re-reading, think it's enough to turn me veggie...life seems so much simpler?

Actually, just love these detailed explanations of cuts & how they're produced. If only I could remember them!

Trying to brief myself on the correct bit to order, I started to look things up & got more & more confused!

Wait till you look into the methods of curing!!
