Flour Tortillas

I was asked for my tortilla recipe on another thread, so here it is.....

250g (8oz) Plain Flour
1/4 - 1/2 Teaspoon Salt
60g (2oz) Good Margarine
125ml (4 fl oz) Warm Water


Mix together in an electric mixer (pref dough hook) for 2-3 minutes, or until a dough forms. You can do this by hand but it takes slightly longer :-[

Leave to stand at room temperature for 30 minutes.

Divide into 8 pieces, and roll them out on a heavily floured surface (pinny recommended ;)). Cook each one as it is rolled out - it is easier. You can stack them with greaseproof paper in between if you want, but it is rather fiddley.

Cook in a hot dry frying pan. After about 2-3 minutes it will be ready for turning over. When cooked on both sides, store in tin foil - they retain their heat well. If you want to use them later, warm them under the grill.

Tricia I'm going to give this recipe a try. We first had tortillas in a Mexican restuarant in California and they were lovely. But I have not been able to find anything nearly as good from supermarkets since, perhaps homemade will make a difference. Will let you know the verdict! Thanks.  :)
