I use mine small, unless of course I miss them, they do tend to lose taste as they get really big. Personally I think about 2 1/2 -3 inches is big enough and I stick to that if I have loads, but if a bit scarce I might leave them a bit longer.
They look good Tim, looks like white custard/scallop.
Sometimes if they get bigger,I slice them across like you would a bread roll, steam lightly or pan fry ,top with a slice of ham, thin slice of swiss cheese,under the grill to melt a little then cover with Hollandaise sauce.Bit like Scallop Benedict you might say!!
