Freezing potatoes
« on: July 16, 2007, 22:04:45 »
I've just dug up some of my potatoes. Most of them are fine, but some are a bit holey. Seems a shame to waste a whole potato so I thought I'd cube or chip them and freeze them. Anyone done this? If so, did you parboil or blanch them first? I'm mainly thinking of the starch content and whether that'll affect their keeping and flavour. Any advice welcome.
