hi ya all
can any give me an idea for a recipe for buttersquash pleaaaaaase? :-/
I am planning to have a go at growin them next year but thought I had better taste em first so bought my first one from Tesco yesterday. ;D
Only problem is I haven't got a clue what to do with it ::)
Al recipes gratefully received ;)

Easiest way for first time. Cut into segments (lengthways) and scrape out the seeds. If they are ripe you could dry them off and save them for next year. Put segments in a baking tray. Salt and pepper, brush them with olive oil and butter. Cover with foil. Bake in oven 180 for about an hour. Test occasionally cos some cook faster than others. Ready when just soft. Serve. Enjoy.

Ohh Lil, one of our favorite veg!! I have loads of recipes, but our favorite is butternut and carrot puree. Great with roast dinner! You need approx same amount of veg.
Peel carrots cut into chunks. Cut squash in 1/2, remove seeds with a spoon, and cut into chunks. Simmer carrot for about 10 mins in small amount of water with lid on, then add squash, cook them until soft. Puree, add cream, butter and nutmeg, s& P all to taste. Serve.
Another lovely thing to do is soup! The types are endless........................

What a great thread! Was out shopping yesterday & saw it at not-to-be-ignored prices - so bought one. I'll give the puree a go with half...thought of stuffing the other half with a mixture of chopped mushrooms, garlic, chillies ::), chopped toms,anchovies, fine seasoned breadcrumbs (buy Chiltern Country Stuffing Mix from Sainsburys - great stuff & so versatile - excellent for breading escaloppes), parsley & parmesan, bound together with a little chicken stock & baking it..
At the same shop bought my other 'bargain' - 2 'frogskin' melons - for £1???? I'll be jumping for joy if I like them...they've got loads on offer. - Lish

One point I should bring up is that Butternut squash are impossible to grow outdoors here in our very cold part of Shropshire. We get reasonable results from in the polytunnel. It might be better to look for some of the other varieties with a shorter hot day requirement. It tells you on the seed catalogue blurb.

Eric here in Sussex I got a fair crop of butternut sprinter, about 5 off each plant. More plants next year!! DP

just to let you know, tried the baked method and it was delicious (altho husband unsure but who cares ;D)
I will be having a go at growing it.
I know that it can be grown up here in South Yorkshire as I know of some one who as had a glut of it this year.
The adding stuffing sounds good and the chillis ( I have had a glut of them this year so need ways to get rid of them, what better way) ;D

I know we had an exceptional Summer but mine did very well outside and I'm in Yorkshire. I used some in my piccalilli .
