Fresh Tomato Sauce.. try it !!

Debs:
serves 6 ( freezes very well )

3 tblsp olive oil, 1 onion skinned and chopped, 1 garlic clove skinned and chopped,  1½ lbs fresh tomatoes/ or 2x 15oz cans, 1 tsp sugar, 1 tsp salt, fresh ground pepper, sml handful fresh basil or ½ tsp dried.

Heat oil in saucepan, add onion. Cook for 5 mins over gentle heat stir occassionally. Add garlic, tomatoes, sugar, salt, plenty of pepper and dried basil (if using)
fresh basil is added after sauce is cooked.
Let sauce simmer over low heat for 30-40 mins.
Cool, add fresh basil (if using) then liquidize and sieve the sauce.  The sauce will be velvet smooth and will surprise you at how excellent it is !!

Can be used as base for bolognese, as sauce for pasta,
base for pizza etc..

Forgot to add  ...

Best frozen in various ways e.g. in ice cubes ( then you can use smaller amounts), in varying quantities in freezer bags ( don't forget to allow it to cool before putting in freezer).
