With ref to the marrow rum recipes; have tried the scoop it out and fill it with demerara sugar and orange juice one most successfully. Difficult to hang it but do it in the loft with muslin (or pair of tights) and as long as it is well taped up it works ok.
Only thing is it only makes about half a demijohn even from a big marrow. It is extremely sweet and sickly but bloomin' lovely!
Got some on the windowledge that's been fermenting for about a year now which I top up with some hot sugary water every couple of months.
A previous post said it was full of bacteria but that's not a problem I've had - well not knowingly anyway! :P Do make sure you wash the tights first tho!!
