chitting potatoes

hi all, i was reading a garden book and i said to chit (pregerminate - grow shoots ) our potatoes after christmas, so my questions are :
when will all you start,
how will you do this, (ie) egg boxes- seed trays, netbags etc, etc, etc
where: place them in a potting shed, greenhouse, windowsill, etc, etc,
when do you plant them after they have chitted (grow green shoots)

We use eggboxes inside the fruit trays (cardboard) on top of the wardrobe in the bedroom... start mid Jan-ea Feb.
